Ingredients:
1 onion (chopped)
2 cloves garlic (minced)
2 carrots (chopped)
2 celery stalks (chopped)
1 zucchini (chopped)
5 Broccolini stalks
1 cup chopped kale or spinach
4 cups vegetable broth
1 teaspoon turmeric
Salt and pepper to taste
Instructions:
In a large pot, sauté the onion and garlic until fragrant.
Add the carrots, celery, zucchini, kale or spinach, and cook for a few minutes.
Pour in the vegetable broth and bring to a boil.
